It's another beautiful week in the Rio Grande Valley . . .

Hope you all had a very Merry Christmas! Today concludes a wonderful month spent highlighting your favorite holiday traditions and memories. Have one last submission to share with you...

BEVERLY YOUNG - Our family started a new tradition last year. We now have turkey, dressing and all the trimmings on Christmas Eve instead of Christmas Day. The Christmas Eve meal is usually with just our immediate family. We'll spend the day baking and cooking and enjoying each others company. This year we plan to attend the early church service at 6:00 pm. And when we get home...our dinner is ready! Last year our Christmas day dinner was at my sister-in-laws house and we had enchiladas and tamales. The whole family was there, about 18 of us. This year we will have dinner at my house and we are preparing French Dip sandwiches and salad for thirteen. My sister-in-law will bring chips, dips and other munchies to have before dinner. This is so easy....we'll put a large roast with lots of herbs and other seasonings in the crock pot early morning and let it cook for at least 10 hours....Yum Yum!

As a bonus, Bev was kind enough to share her French Dip recipe:

FRENCH DIP SANDWICHES

3 ˝ to 4 lb boneless chuck roast              

1 tsp. rosemary

˝ cup soy sauce                                       

1 tsp. thyme

1 can beef broth                                        

12 French sandwich rolls

1 bay leaf                                                   

1 lb mushrooms

1 sweet onion sliced in strips                     

Pepper to taste

1 tsp. garlic powder                                   

12 slices provolone cheese

Place meat in slow cooker. Combine soy sauce and next 6 ingredients; pour over roast. Add water until roast is covered. Cook, covered on low heat for 10 hours. When done, remove roast and place on platter. Shred meat with fork into small pieces. In large skillet, sauté mushrooms and onions in butter. Butter and toast each side of the rolls. Melt cheese on rolls after toasted. Add shredded meat on bottom piece of roll and top with mushrooms and onions. Strain Au Jus using tea strainer. Put good amount of Au Jus in bowl to use for dipping. Serve prepared sandwich with Au Jus.

Celebrating birthdays this week were LIBBY BROWN and RICK BARRERA from Tuesday, while TAMMIE RISICA and KRISTEN (HOUTS) RAY are celebrating today. Tomorrow's birthdays include BARBARA KELLY and KATIE (ZEY) ANDERSON. GEOFF HALL, GARY CLEMONS, COLTON NEUGEBAUER, KAREN HOUTS, SUE ELLEN THOMAS, HANNAH HARRIS and REBECCA (SCHWARZ) HICKEY have birthdays on Friday, while ANGIE SHUPE, CRIS VILLEGAS, BILL MARTIN, and SHERI ROWLAND will blow out their candles Saturday. Finally, New Year's babies of years past include: MARIANA DE LA ROSA, KELLI JONES, and LORI PEREZ! Happy Birthday, y'all!!
