This Sunday will mark the end of Lent and many will spend Easter Sunday celebrating and spending time with friends and family. Most of us will spend the day outdoors barbecuing. We throw in the Easter baskets and Easter egg hunts and we have the perfect celebration. Though we stick to tradition during lent, we enjoy our own traditions come Easter Sunday. Dishes like capirotada, fish dishes and fruit dishes are eaten throughout Lent.
The day usually begins by attending Sunday Service and then gathering the family to eat. Rounding up the family for a gathering to the nearest restaurant is another option, but for those of us who would rather cook, here is a simple recipe that is popular and easy to make: The beef fajitas.
This dish is easy to make at home. Chicken, pork, or vegetables can be used as substitutions instead of beef.
Cooking time: From start to finish about 30 minutes.
What you will need:
1 lb of flank steak or skirt steak
2 large bell peppers (red and green)
1 medium onion, peeled and sliced
2 Avocados, peeled and sliced
Place beef strips in dish and season with your favorite steak seasoning.
Place beef strips in hot frying pan and cook each side for approximately 3 to 4 minutes.
Cut onion, green and red peppers into 1’’ chunks. Place cooking oil in pan and cook until tender.
Serve immediately atop of flour tortillas, slices of avocado and queso fresco. Enjoy!
