Consumed by the holiday season, stress, joy, commitments, festivities and all, our tiny, weekly windows of time for sit-down dinners and attempted regrouping are eagerly welcomed. Throw in endless pork options, some Sass & Class (vodka, grapefruit juice with lemon and some soda water) and your Saturday afternoon just got that much better!

If you haven't guessed it yet, we satisfied our hunger and lightened our spirits at the newly opened Speakeasy themed bistro and bar, The Blinde Pig. We definitely felt like the coolest of cats lounging around in Edinburg. We were so eager to go check this place out that we started knocking on their door a second past their 4:00 p.m. opening hour. The words “over enthusiastic” don’t begin to describe us adequately.

As we made our way to our seats, we saw a familiar face behind the bar.

 

Trisha: If we knew it was you, we would have knocked a whole lot sooner!

Gaby: And louder!

 

Our familiar bartender laughed wholeheartedly and joyfully proceeded to ask us what we would like to order.

 

Gaby: I hate to pull the “old lady” card on you, but can you lower the volume a bit. I think this might be too intense for a Saturday, mid-afternoon?

 

We don’t know if it was a joke or if they were being pleasing, but the music suddenly turned down a good 10 notches and switched over to a jazz station. Yup, we guess it was the “old lady” part that our server was trying to appease! Lol. A few laughs in and the board behind the bar caught our eyes. “½ off appetizers and drink specials”. Ding, ding ding! We were in heaven. Enjoy a $5 Old Fashioned, $6 Tiger’s Mil, $7 Blinde Pig or an $8 Sidecar everyday during their Happy Hour from 4:00 p.m. to 8:00 p.m. We’re sure the good doctors, nurses and admin workers from the hospital across the street will surely appreciate that after their shift is over. Now don’t deny that you too like a little good unwinding after work; we’ve watched Grey’s Anatomy.

Not a big cocktail drinker? Well, The Blinde Pig has beer as well. If you really like a cold one, then this is your spot. They have glass chiller. Instant freeze! We've found no others in our lovely RGV establishments...yet.

If drinks are not your thing, don’t fret. There are plenty of food options. If you’re craving something out of the ordinary, may we recommend the one and only bacon-wrapped, onion ring? Yes, you read that correctly. We’ll give you some time to let that sink in. Bacon. Wrapped. Onion. Ring. We think this might be the only place in South Texas to offer this one-of-a-kind delicacy. You can order these on their own or as part of The Bacon Platter which is also served with bacon-wrapped jalapeño poppers and candy bacon. Apart from some really crazy appetizers, The Blinde Pig serves up some mean burgers and sandwiches like their Brunch Burger (ground chuck patty, candied bacon, American cheese, fried egg, avocado, tomato) or thier (yup you guessed it) Bacon-Wrapped Cheese Sandwich! Salads and soups are also available.
